Under the Trump administration, the USDA allowed more pork plants to speed processing, saying data following a decadeslong pilot program showed faster line speeds didn’t threaten worker safety. A USDA representative said the Biden administration is committed to worker and food safety and that it is reviewing the court’s decision on line speeds.
